Introducing … Monday meals

Starting this week, we’ll have a regular feature here on Moms of NNY. Each Monday, we’ll be posting a recipe from a contributor or one submitted by a reader.

I’ve been trying to do better at meal planning, not just because it’s far easier to shop for groceries when I know exactly what I need. But it also relieves some stress, as I don’t have to constantly be thinking about what I’m going to make. Because honestly, some days I don’t want to make anything at all. 
And sometimes the plan goes out the window anyway, but hey, at least I try.

I’m sure I’m not the only one who struggles to plan and actually execute good dinners, so I’m hoping this feature will at least help kick our week off right.

I’m going to start with a simple one that was a favorite when I was growing up. I haven’t made it much now that I’m cooking for my own household … maybe because it never seems to turn out quite the same way my mom made it.

Honey mustard chicken

You’ll need:

  • 1/2 cup honey
  • 1/2 cup dijon mustard
  • pepper to taste
  • 2 tsp curry powder

Pour marinade over six boneless, skinless chicken breasts arranged in a single layer in a shallow dish.

Bake uncovered around 35 minutes at 375. It’s perfect served over rice or quinoa.
